I am a burrito lover and it has to have a lot of flavor. Back when our family was eating processed foods I was forever buying the frozen burritos from the store and would just pop them in the microwave. Zap them for a few minutes and then slather with salsa and sour cream. It was good to me back then. I needed to recreate that quick fix meal and here is what I came up with.
These are so easy to fix and more than likely you have all the ingredients in your pantry. My family raves about them and I always plan to have extras in the freezer but they never last more than 2 days. They freeze well and they reheat well. We don’t own a microwave so I can’t tell you how well they reheat in one but they do fine in the oven.
Grab-n-Go Burritos
2 lbs grass fed ground beef
2 cans refried beans* (16 oz each)
3 cups Monterey Jack Cheese
1 1/3 cups enchilada sauce*
1/3 cup chopped onion
2 tbsp chili powder
1 tbsp ground cumin
1 tbsp garlic powder
2 tsp dried oregano
1 tsp salt
16 flour tortillas* (depending upon size)
In a skillet cook ground beef over medium heat until no longer pink. Drain beef and return to skillet; add the refried beans, enchilada sauce, onions and seasonings. Bring to a boil and reduce heat. Add cheese and allow to cook on low for about 10 minutes. Spoon filling off center on each tortilla. Fold sides and end over filling and roll up. For freezing I allow them to cool and then place them in a freezer bag.
*I will be updating my blog with the homemade recipes for these foods. I try to use very few items that are already made from the store.
