Finger Licking Good Fried Chicken

I love good comfort foods and honestly this is one of the unhealthy foods that I still crave. I love fried chicken smothered with a great creamy gravy. I just can’t help myself. I also love a heaping pile of mashed potatoes covered with corn and then layered with gravy. This meal is so not healthy but I am going to share it anyway. We all need a good comfort food. Right? Right!

Finger Licking Good Fried Chicken

2 lbs. chicken
Milk
1 cup flour
2 tsp. salt
2 tsp. pepper
Peanut Oil for frying

Wash and dry the chicken pieces and then place them in a single layer in a shallow dish. Pour enough milk to cover the chicken and allow to soak for 1 hour, turning once. Mix the flour, salt and pepper in a bowl. Remove chicken from the milk and roll in the seasoned flour making sure to cover the chicken thoroughly . In a large skillet pour the oil until is about 1/2 inch deep and then heat to around 375 degrees. Fry chicken until thoroughly cooked.

Creamy Gravy

3 tbsp. pan drippings
3 tbsp. flour
1 1/2 to 2 cups cream
salt
pepper

Using the same skillet that you used to fry the chicken heat 3 tbsp. of the pan drippings on a low temperature and add flour. Scrap up the brown bit on the pan as this is what really flavors your gravy. Stir the flour into the drippings until well combined and heat on low until lightly browned. Slowly add cream and stir until smooth. If your gravy gets really thick add more cream until it is the consistency that you like. Season with salt and pepper and allow to cook on very low temperature for about 5 minutes.  Pour over fried chicken or mashed potatoes and enjoy!
